My children love a good ice lollie (popsicle) as much as the next kid, but I don’t always love the ingredients. Most store-bought ice lollies are chock full of added sugars, as well as many other undesirable elements. So when my friend posted this recipe for strawberry ice lollies from Jamie Oliver, I was excited to try them, especially as they contain only three ingredients.
I particularly love the fact that these popsicles are made with yogurt, rather than just fruit, water, and sugar. It makes for a far more balanced snack. If you use full-fat yogurt, they will provide your little ones with protein and fat thanks to the yogurt, as well as carbohydrates from the strawberries. A snack that contains protein and fat produces a far more stable child than a snack that just contains carbohydrates (read – sugar rush then crash).
So how do you make these refreshingly healthy strawberry popsicles? All you do is blend together 1½ cups of fresh or frozen strawberries, 1/2 a cup of plain yogurt, and 1 teaspoon of honey. Then pour the mixture into your favorite ice lolly molds, freeze for at least 4 hours, then enjoy.
Happy 4th everyone.
