Almond Chia Seed Energy Cookies {Vegan, Gluten-Free}

These vegan gluten free almond chia seed energy cookies are full of oats, nuts, and healthy fats making them a deliciously satisfying snack.
  • 1 cup oats
  • ¼ cup chia seeds
  • ¼ cup flax seeds
  • ¼ cup almond butter
  • 1.5 tsp cinnamon
  • ¼ cup maple syrup
  • ⅓ cup raisins
  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Put the oats, chia seeds, and flax seeds in a blender and pulse until mostly ground and uniform.
  3. Pour the dry mixture into a mixing bowl along with the almond butter, cinnamon, maple syrup, and raisins. Mix until well combined. If the ingredients do not stick together, add a dash of water.
  4. Roll approximately 1 tbsp of mixture at a time into a ball and place on a parchment lined baking tray (I recommend keeping your hands slightly wet as you do this to prevent the mixture from sticking to you).
  5. Flatten the balls with the underside of a glass to create rounded, slightly flattened cookies.
  6. Bake for 8 to 9 minutes, or until the edges are golden brown.
