Peanut Butter Cacao Nib Cookies {Gluten Free}

  • 1 cup oats (use GF oats to make GF cookies)
  • ¼ cup sunflower seeds
  • 2 tbsp cocoa powder
  • ½ tsp baking soda
  • 8 medjool dates
  • 1 large egg
  • 1 cup peanut butter
  • 1 tsp vanilla extract
  • ¼ cup cacao nibs
  1. Preheat oven to 350F (180 C).
  2. Line baking sheet with parchment paper or lightly coat with cooking spray.
  3. In a medium bowl, mix the oats, seeds, cocoa powder, and baking soda.
  4. In a separate bowl, pour ¼ cup hot water over the dates, let sit for a few minutes.
  5. Remove dates from the water and take out the pits.
  6. In a blender, blend together the dates and egg. If it is too sticky, add a tsp water.
  7. Put the date and egg puree in a large bowl. Mix in the peanut butter, vanilla extract, and dry ingredients, and stir until well combined.
  8. Stir in the cacao nibs.
  9. Put tablespoon-sized heaps of mixture on the baking tray about 2 inches apart, and lightly press down into cookie shape.
  10. Bake in the oven for 15 minutes.
  11. Remove from oven and place on a cooling rack.
