Mayo-Free Avocado Tuna Salad

This tuna salad is made with nutrient-dense avocado instead of mayonnaise to create a creamy, fiber and protein-packed lunch or side dish
  • 1 medium avocado
  • 2 5-ounce cans solid tuna in water, drained
  • 1 stalk celery, washed and diced
  • 2 green onions, washed and diced
  • 2 tsp dijon mustard
  • 1 tsp balsamic vinegar
  • Freshly ground black pepper to taste
  1. In a medium bowl mash the avocado with a fork.
  2. Add the remaining ingredients and mix until well combined
  3. Serve on a green salad or toast, or eat with a spoon.
