Healing Bone Broth Egg Drop Soup

This healing bone broth egg drop soup is a wholesome, nutrient-dense soup that is perfect for when you are feeling under the weather
  • 2 cups bone broth (can use any broth)
  • ½ cup water
  • 1 tsp miso paste (can omit if you don't have it)
  • ½ tsp chili paste
  • Splash of tamari/soy sauce
  • 2 large eggs
  • 1 zucchini
  • Handful dandelion greens (or any other greens)
  • 1 clove garlic, crushed
  • 3 scallions, chopped
  • Salt and pepper to taste
  1. In a medium pan put the broth, water, miso paste, chili paste, and tamari/soy sauce.
  2. Stir until well combined and heat over a medium heat.
  3. Meanwhile whisk the 2 eggs in a bowl and zoodle (or grate) the zucchini .
  4. Once the broth is steaming, gently stir it while slowly pouring in the whisked eggs.
  5. Add the zoodles, dandelion greens, and crushed garlic to the broth.
  6. Warm for a few minutes.
  7. Add salt and pepper to taste (and hot sauce if you like it spicy).
  8. Serve with the scallions on top.
