5-Minute Pesto

Serves: 8 fluid ounces
- 2 cups basil leaves
- ¼ cup pine nuts
- 3 cloves garlic (decent sized)
- ½ cup olive oil (not extra-virgin)
- ½ cup grated parmesan
- Freshly ground black pepper
- Put the basil, pine nuts, and garlic in a food processor and blend until fine.
- Slowly add the olive oil while blending.
- Add the parmesan and blend until just combined.
- Add freshly ground black pepper to taste.
- Store in a jar in the fridge to use in sandwiches, on roasted vegetables, with pasta or brown rice, or any other delicious way you can think of.
