Peanut Butter Banana Custard Oats

  • ⅓ cup oats
  • ¾ cup water
  • ΒΌ tsp cinnamon
  • 1 egg
  • ⅔ medium ripe banana
  • Splash of milk (dairy or plant)
  • 1 tbsp peanut butter
  1. Put the oats, water, cinnamon, and egg in a bowl and whisk together.
  2. Add the banana and mash it into the mixture with a fork.
  3. Pour the mixture into a small pan with a lid.
  4. Put the pan over a medium high heat to bring to the boil. Then turn the heat to low, cover, and simmer for 7 minutes, or until the oats are cooked. Stir occasionally and if it is starting to stick, add a tablespoon of water.
  5. Once cooked, remove from the heat, and serve in a bowl with a splash of milk and a tablespoon of peanut butter.
