Chewy Chocolate Matcha Energy Bars {Vegan}

  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • 1¼ cup rolled oats
  • ½ cup raw almonds
  • ½ cup raw cashews
  • ½ cup unsweetened shredded coconut
  • ⅓ cup cacao powder
  • 2 tbsp matcha powder
  • 2 tbsp chia seeds
  • ⅛ tsp salt
  • 1 medium ripe banana
  • 1 small avocado
  • ⅓ cup maple syrup
  • 2 tbsp coconut oil
  1. Preheat the oven to 350 F and grease an 9 x 9 baking pan or line it with parchment paper.
  2. Mix together the flax seed and water and set aside for a few minutes.
  3. Put the oats, almonds, and cashews in a blender and pulse until fine.
  4. In a large bowl, mix the blended oats, almonds, and cashews with the coconut, cacao powder, matcha powder, chia seeds, and salt.
  5. In a medium bowl, mash together the banana and avocado.
  6. Add the maple syrup, coconut oil, and flax seed mix to the banana and avocado, and stir to combine.
  7. Pour the banana mixture into the oats and mix well.
  8. Put the mixture into the baking pan and spread it evenly with a spatula.
  9. Place in the oven for 20 minutes.
  10. Remove from the oven and allow to cool in the pan for 10 minutes before turning out onto a cooling rack.
  11. Once completely cool, cut into bars and store in an airtight container in the fridge for up to 5 days, or in the freezer for up to 3 months.
