Super Easy Chicken Avocado Burritos

These chicken avocado burritos can be assembled in no time, and are completely customizable to keep everyone in the family happy.
Ingredients
  • 1 tbsp olive oil
  • 12 ounces pre-cooked chicken
  • 2 tbsp taco seasoning (see below)
  • 8 whole wheat tortillas
  • 2 avocados, sliced
  • 1 cup grated cheese
  • 1 cup salsa
  • 2 cups cooked rice
  • Sliced jalapeños and chopped cilantro (optional)

  • For the taco seasoning:
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp red pepper flakes
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp cayenne (omit if you don’t want spicy)
Instructions
  1. To make the taco seasoning, put the chili powder, cumin, paprika, garlic powder, onion powder, red pepper flakes, oregano, and salt in a mason jar or other container. Shake well and set aside.
  2. In a large skillet, heat the olive oil over a medium heat.
  3. Add the chicken, taco seasoning and 3 tbsp water.
  4. Saute for about 5 minutes, or until chicken is warmed through.
  5. Place 1 tortilla on a flat surface. Add 4 small pieces of chicken, 3 slices of avocado, 1 tbsp each of cheese and salsa, and any other fillings you want.
  6. Be mindful not to fill the burrito too full, or you won't be able to close it.
  7. Roll the burrito (for help, see the link above).
  8. Place a skillet over a medium low heat.
  9. Add the burritos and cook for about 2 minutes on each side, until lightly toasted.
  10. Serve and enjoy.
