This toasted fruit and nut muesli is full of fiber, healthy fats, and antioxidants. Add some Greek yogurt and berries for a wholesome and filling breakfast.
Ingredients
6 cups rolled oats
1 cup shredded unsweetened coconut
1 cup raw sliced almonds
¾ cup ground flax seed
½ cup raw pumpkin seeds (pepitas)
¼ cup raw sunflower seeds
¼ cup maple syrup
2 tbsp brown sugar
1 tbsp olive oil
2 tbsp water
½ cup dried fruit (raisins, cherries, apricots, or other fruit of your choosing)
Instructions
Preheat the oven to 300F (150C).
In a large bowl, put all ingredients except the dried fruit and stir until well combined.
Spread the mixture on a large baking tray and put in the oven for 25 minutes.
Remove from the oven, scatter over the dried fruit, and return to the oven for a further 15 minutes.
Remove from the oven and allow to cool.
Store in an airtight contained for up to 3 weeks.
