Toasted Fruit and Nut Muesli {Vegan}

This toasted fruit and nut muesli is full of fiber, healthy fats, and antioxidants. Add some Greek yogurt and berries for a wholesome and filling breakfast.
Ingredients
  • 6 cups rolled oats
  • 1 cup shredded unsweetened coconut
  • 1 cup raw sliced almonds
  • ¾ cup ground flax seed
  • ½ cup raw pumpkin seeds (pepitas)
  • ¼ cup raw sunflower seeds
  • ¼ cup maple syrup
  • 2 tbsp brown sugar
  • 1 tbsp olive oil
  • 2 tbsp water
  • ½ cup dried fruit (raisins, cherries, apricots, or other fruit of your choosing)
Instructions
  1. Preheat the oven to 300F (150C).
  2. In a large bowl, put all ingredients except the dried fruit and stir until well combined.
  3. Spread the mixture on a large baking tray and put in the oven for 25 minutes.
  4. Remove from the oven, scatter over the dried fruit, and return to the oven for a further 15 minutes.
  5. Remove from the oven and allow to cool.
  6. Store in an airtight contained for up to 3 weeks.
