Homemade Freezer Burritos

These homemade freezer burritos can be reheated in the microwave in 3 minutes for a healthy and delicious last-minute lunch or dinner.
Ingredients
  • For the burrito filling:
  • 1 tbsp olive oil
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, cubed
  • 1 can black beans (~1¼ cups), drained and rinsed
  • 1 can corn (~1½ cup), drained and rinsed
  • 1 tbsp homemade taco seasoning
  • ¼ cup cilantro, chopped
  • Juice of ½ lime
  • Salt to taste
  • For the taco seasoning:
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • ½ tsp paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp red pepper flakes
  • ¼ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp cayenne (omit if you don’t want spicy)
  • For making the burritos:
  • 8 flour tortillas (whole wheat if possible)
  • ½ cup grated cheese (omit for vegan)
  • ½ cup salsa
  • ½ cup plain yogurt (omit for vegan)
  • Cooked brown rice
Instructions
  1. To make the taco seasoning, put the chili powder, cumin, paprika, garlic powder, onion powder, red pepper flakes, oregano, and salt in a mason jar or other container. Shake well and set aside.
  2. In a large pan, heat the olive oil over a medium heat.
  3. Add the red onion and cook for about 3 minutes.
  4. Add the bell pepper and zucchini, and cook for an additional 3 minutes.
  5. Add the black beans, corn, and taco seasoning, cover, and simmer for 10 minutes.
  6. Remove from the heat, stir in the cilantro and lime juice, and add salt to taste.
  7. To prepare the burritos, place a tortilla on a flat surface.
  8. Add ¼ cup of the burrito filling, along with 1 tbsp grated cheese, 1 tbsp salsa, 1 tbsp plain yogurt, and a spoonful of brown rice.
  9. Roll the burrito with the ends tucked in so that there are no open ends.
  10. Place the burrito in a dry skillet over a medium heat.
  11. Cook gently until both sides are lightly browned, around 2 minutes per side.
  12. Place on a plate to cool.
  13. Once cool, wrap in aluminum foil.
  14. Once all the burritos are assembled, cooked, cooled, and wrapped, place them in a freezer bag and pop them in your freezer.
  15. To reheat, remove them from the aluminum foil, wrap them in a piece of damp kitchen paper, and place in the microwave for 90 seconds.
  16. Remove from the microwave, cut the burrito in half, and return to the microwave for an additional 90 seconds, or until warm through.
  17. If you do not have a microwave, you can leave your burrito in the fridge to defrost overnight. Once it is defrosted, remove the aluminum foil and place on a dry skillet over a medium heat for about 4 minutes each side, until warm through.
