Almond Date Granola Bars {Vegan, Gluten Free}

These vegan, gluten free almond date granola bars are made with oats, garbanzo bean flour, and almond butter for a protein and fiber-filled snack.
  • 1 cup gluten free rolled oats
  • ⅓ cup garbanzo bean flour
  • 2 tbsp ground flax seed
  • 2 tbsp chia seeds
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup raw almonds, roughly chopped
  • ½ cup dates, chopped
  • ¼ cup almond butter
  • ¼ cup honey (or maple syrup for vegan)
  • 3 tablespoons olive oil
  • ½ tsp almond extract
  1. Preheat the oven to 350F and line a square baking pan (8" x 8") with parchment paper.
  2. In a large bowl, combine the oats, garbanzo bean flour, flax seed, chia seeds, cinnamon, salt, almonds, and dates.
  3. In a small saucepan, gently warm the almond butter and honey (or maple syrup).
  4. Add the almond butter and honey, olive oil, and almond extract to the dry ingredients, and stir well to combine.
  5. Pour the mixture into the prepared baking pan, cover with a sheet of parchment paper, and press the mixture down well with your hands or a flat object (like a book).
  6. Remove the top piece of parchment paper and place in the oven for 25-30 minutes, until golden brown.
  7. Leave to cool completely before removing from the pan and cutting into squares.
  8. Store in an airtight container in the fridge for up to one week, or in the freezer for up to 3 months.
