Cauliflower Kale Detox Salad {Vegan}

This fresh detox salad makes the perfect accompaniment to any meal
  • 1 medium cauliflower head, chopped into small florets
  • 3 cups kale, chopped
  • 3 Persian cucumbers, diced
  • 3 stalks of celery, diced
  • ⅓ cup chopped cilantro
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste
  1. Put all the ingredients in a large bowl.
  2. Toss to combine.
  3. Season with salt and freshly ground black pepper to taste.
  4. Serve and enjoy.
