Blackberry Apple Crumble Bars

These blackberry apple crumble bars are a tasty, nutritious, and simple way to make use of some of the most delicious Fall produce
  • ¾ cup (100g) rolled oats
  • ¾ cup (125g) whole wheat flour
  • ¼ cup (25g) unsweetened shredded coconut
  • ½ cup (100g) packed brown sugar
  • ¼ tsp salt
  • 6 tbsp (85 grams) unsalted butter, melted
  • 1 cup (150g) blackberries, cut in half
  • 1½ cup (200g) peeled chopped apples
  • 1 tbsp (15 grams) granulated sugar
  • 1 tbsp (15 ml) lemon juice
  • ½ tsp cinnamon
  • 1 tsp cornstarch
  1. Heat oven to 375 F (180 C) and grease an 8-by-8-inch square baking pan.
  2. Place oats, flour, coconut, brown sugar, and salt in a bowl and mix.
  3. Add the melted butter and stir until it forms lumps. Add a touch more flour if the mixture looks too wet.
  4. Put ½ cup of the crumble mixture to one side.
  5. Put the rest of the crumb mixture into the prepared pan and press it down evenly.
  6. In a separate bowl add the blackberries, apples, granulated sugar, lemon juice, cinnamon, and cornstarch, and mix well.
  7. Spread the fruit mixture over the crumb in the pan.
  8. Sprinkle the reserved crumble mixture over the fruit and bake for 30-40 minutes.
  9. Leave in the pan to cool. You can do this in the fridge.
  10. Cut into squares and enjoy. Store in the fridge.
