Oven Roasted Tomato Sauce with Spaghetti

  • 3 lbs ripe tomatoes, roughly cut into 1" cubes
  • 1 red onion, finely sliced
  • 3 cloves garlic, finely sliced
  • 3 tbsp capers, drained
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp tomato paste
  • Salt and freshly ground black pepper
  • ¼ cup shredded fresh basil
  • ¼ cup freshly grated parmesan (omit for vegan version)
  • 12 ounces whole wheat spaghetti
  1. Preheat the oven to 325F.
  2. Put the tomatoes, red onions, garlic, and capers in a large roasting dish.
  3. Drizzle over the olive oil, balsamic vinegar, and a few grinds of black pepper, and stir gently.
  4. Place in the oven for 1.5 - 2 hrs until soft and slightly caramelized around the edges.
  5. When the tomatoes are cooked, remove them from the oven, add the tomato paste and stir well.
  6. Mix in the basil and adjust seasonings as necessary.
  7. Meanwhile, cook the spaghetti according to the instructions on the packet.
  8. Serve the sauce over the spaghetti with parmesan and a crisp green side salad.
