Apple Pie Breakfast Cookies

Healthy whole grain breakfast cookies with apples, cinnamon, raisins, and walnuts.
Ingredients
  • 1 large apple w/ skin, cored and cubed
  • 1 tsp brown sugar
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1.5 tsp cinnamon
  • 1 tbsp chia seeds
  • ¼ tsp salt
  • ¼ cup maple syrup
  • ¼ cup unsweetened apple sauce
  • 3 tbsp butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup oats
  • ½ cup raisins
  • ½ cup walnuts
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Put the apple and brown sugar in a pan over a medium low heat. Cover and cook until soft, about 5 minutes, stirring occasionally.
  4. In a medium bowl, combine the flour, baking powder, cinnamon, chia seeds, and salt.
  5. In a large bowl whisk together the maple syrup, apple sauce, butter, egg, and vanilla.
  6. Pour the dry ingredients into the wet and stir to combine.
  7. Add the oats, raisins, walnuts, and cooked apples and mix until well combined.
  8. Drop the cookie dough 1 heaped tablespoon at a time on the parchment lined baking sheet. Press them down slightly to make cookie shapes (they will not spread in the oven).
  9. Bake for 13-15 minutes or until firm on the outside, then remove from the oven and place on a cooling rack to cool.
