Mixed Bean Salad {Vegan}

- 1.5 cups cooked garbanzo beans
- 1.5 cups cooked kidney beans
- 1 cup edamame, cooked
- 1 cup corn
- ⅓ cup black olives, sliced
- ½ bell pepper, diced
- 4 salad onions (scallions), sliced
- For the dressing:
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- Juice of ½ lemon
- 2 cloves garlic, crushed
- Salt and pepper, to taste
- Put the beans, edamame, corn, olives, bell pepper, and salad onions in a large bowl.
- In a small bowl, whisk together the olive oil, vinegar, mustard, lemon juice, garlic, and salt and pepper to taste.
- Pour the dressing onto the salad and mix.
