Mixed Bean Salad {Vegan}

Ingredients
  • 1.5 cups cooked garbanzo beans
  • 1.5 cups cooked kidney beans
  • 1 cup edamame, cooked
  • 1 cup corn
  • ⅓ cup black olives, sliced
  • ½ bell pepper, diced
  • 4 salad onions (scallions), sliced
  • For the dressing:
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • Juice of ½ lemon
  • 2 cloves garlic, crushed
  • Salt and pepper, to taste
Instructions
  1. Put the beans, edamame, corn, olives, bell pepper, and salad onions in a large bowl.
  2. In a small bowl, whisk together the olive oil, vinegar, mustard, lemon juice, garlic, and salt and pepper to taste.
  3. Pour the dressing onto the salad and mix.
