Cherry Almond Energy Balls {Vegan, Gluten Free}

  • ½ cup raw almonds
  • ¼ cup raw cashews
  • 12 dates, seed removed
  • ¼ cup dried cherries
  • ¼ cup raisins
  • 2 tbsp unsweetened shredded coconut
  • 2 tbsp chia seeds
  • ½ tsp vanilla essence
  1. Put the almonds and cashews in a blender and pulse until roughly chopped.
  2. Add the dates and blend until roughly chopped.
  3. Add the cherries, raisins, coconut, chia seeds, and vanilla essence and blend until all ingredients are finely chopped.
  4. Form balls using 1 tablespoon of mixture for each.
  5. Chill in the fridge for 1 hour.
  6. Remove from fridge and enjoy.
