This comforting coconut oatmeal is made with almond and coconut milk, making it vegan and dairy free.
  • ½ cup light coconut milk
  • ½ cup unsweetened almond milk
  • 1 cup rolled oats
  • 1 tbsp unsweetened shredded coconut
  • ¼ tsp vanilla essence
  • 1 tsp maple syrup
  • A few chocolate chips for topping (optional)
  1. Mix the coconut milk and almond milk in a pan and bring to the boil over a medium heat.
  2. Once boiling, reduce the heat, add the oats and shredded coconut, cover, and simmer for around 10 minutes, or until the oats are cooked to your liking.
  3. Remove from the heat and stir in the vanilla and maple syrup.
  4. Serve topped with a few chocolate chips.
