Swiss Bircher Muesli

A twist on the original Swiss Bircher muesli, with apple, cinnamon, raisins, coconut, and chia seeds.
  • 1⅔ cups (150g) rolled oats
  • ⅓ cup (25g) unsweetened shredded coconut
  • ½ cup (75g) raisins
  • 2 tbsp chia seeds
  • ½ tsp ground cinnamon
  • 3 apples, grated with skin
  • 1 tbsp lemon juice
  • 1¼ cups (300 ml) unsweetened almond milk
  • ¾ cup (200g) plain low fat Greek yogurt
  • ½ cup (115g) unsweetened applesauce
  • 1 tsp vanilla extract
  1. In a large bowl mix together the oats, coconut, raisins, chia seeds, and cinnamon.
  2. In a separate bowl combine the apple with the lemon juice.
  3. Add the apple mixture, almond milk, yogurt, applesauce, and vanilla to the dry ingredients, and stir well.
  4. Cover and place in the refrigerator overnight (or at least 2 hours).
