Spicy Baked Eggs with Spinach

Spicy baked eggs with spinach and fresh marinara sauce
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • ½ tsp red pepper flakes
  • 1 tsp paprika
  • 1 28-ounce can whole peeled tomatoes
  • 2 tbsp tomato paste
  • ½ tsp sugar
  • salt and pepper
  • 2 cups fresh spinach, roughly chopped
  • 5 eggs
  • Parmesan to serve
  1. Preheat the oven to 400 degrees fahrenheit.
  2. Heat the olive oil in a saucepan over a medium heat. Add the onion and cook gently for 2 minutes.
  3. Add the garlic, pepper flakes, and paprika and cook for a further 2 minutes.
  4. Pour in the tomatoes and break them up with the back of a wooden spoon.
  5. Add the tomato paste and sugar, and simmer on low for about 10 minutes or until it has thickened slightly.
  6. Add the spinach, and salt and pepper to taste.
  7. Pour the tomato sauce into a baking dish. Make 5 dips with a wooden spoon and crack one egg into each.
  8. Bake in the oven for 15 to 20 minutes or until the eggs are cooked.
  9. Sprinkle with parmesan and serve with crusty bread.
