Butternut Squash Bread

This delicious butternut squash bread is made with brown sugar and pumpkin spice giving it a rich Fall flavor.
  • ½ cup butter, room temperature
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup pureed cooked butternut squash
  • 1 cup all-purpose flour
  • ½ cup white whole wheat flour
  • 1 tsp baking soda
  • 1½ tsp pumpkin spice seasoning
  • ½ tsp salt
  1. Preheat oven to 350 degrees F and grease or line one loaf pan.
  2. In a large bowl, cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time and beat until well combined.
  4. Stir in butternut squash, and set bowl to one side.
  5. In a medium bowl, stir together the all-purpose flour, whole wheat flour, baking soda, pumpkin spice, and salt.
  6. Pour the flour mixture into the wet ingredients, and stir until just combined.
  7. Pour the batter into the loaf pan and place in the oven.
  8. Bake in the preheated oven for 55 to 60 minutes, until a toothpick inserted into the center comes out clean.
  9. Remove from the oven. Leave to cool in the pan for 15 minutes before turning out to cool completely on a wire rack.
