Peanut Butter Breakfast Cookies {Vegan, Gluten Free}

These peanut butter breakfast cookies are full of protein and fiber and low in sugar to provide a satisfying and tasty breakfast on the go
  • 2.5 cups oats*
  • 2 tbsp ground flax seed
  • 1.5 tsp cinnamon
  • Pinch of salt
  • 2 bananas
  • ½ avocado
  • 1 cup peanut butter
  • ⅓ cup unsweetened apple sauce
  • 2 tbsp maple syrup
  • *use gluten free oats for gluten free cookies
  1. Preheat the oven to 350F and grease a baking tray or line it with parchment paper.
  2. In a medium bowl, mix together the oats, flax seed, cinnamon, and salt.
  3. In a large bowl, mash the bananas and avocado.
  4. Add the peanut butter, apple sauce, and maple syrup to the banana avocado mash, and mix well.
  5. Add the oat mixture to the peanut butter mixture and stir until well combined.
  6. Drop heaped tablespoons of the cookie dough onto the parchment paper about 2 inches apart.
  7. With wet hands, press them into a cookie shape – they won’t spread while baking.
  8. Bake for 17-20 minutes, or until golden brown at the edges.
  9. Remove from the oven and leave to cool on the baking tray for 5 minutes before transferring to a cooling rack.
