Sausage, Kale, and Lentil Soup

This sausage, kale, and lentil soup is a deliciously comforting way to increase your intake of healthy, antioxidant-rich kale.
Ingredients
  • 1 tbsp olive oil
  • 1 lb sweet Italian sausage links, casings removed
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 medium carrots, diced
  • 2 cloves garlic, minced
  • 1 cup brown lentils, sorted and rinsed
  • 1 tsp dried fennel seeds
  • ΒΌ cup tomato puree
  • 3 cups low sodium chicken broth
  • 3 cups water
  • 1 tsp dried oregano
  • 5 cups kale, stems removed and roughly chopped
  • Salt and freshly ground black pepper
Instructions
  1. Heat the olive oil in a Dutch oven or large pot over a medium heat.
  2. When hot, add the sausage meat, breaking it up with a spoon until it starts to brown, about 5 minutes.
  3. Add the onion, celery, carrots, and garlic. Cook until softened, around 5 minutes.
  4. Add the lentils, fennel seeds, and tomato puree and cook for 2 minutes.
  5. Add the broth, water, and oregano, bring to a simmer, and cook until the lentils are tender, about 40 minutes.
  6. Once the lentils are cooked, add the kale and cook for a few minutes until it has softened.
  7. Remove from the heat, add salt and pepper* as necessary, and serve.
  8. *Don't add salt until after the lentils are cooked otherwise they can get a bit tough.
