Simple Vegan Chili

This vegan bean chili is easy to prepare, delicious, and healthy.
Ingredients
  • 1 tbsp olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cups mushrooms, cubed
  • 1 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • ¼ tsp cayenne pepper (omit for mild or add ½ tsp for spicy)
  • ¼ cup tomato paste
  • ¼ tsp salt
  • Freshly ground black pepper
  • 1 tsp dried oregano
  • ½ tsp brown sugar
  • 1 can (14.5 ounces) kidney beans, rinsed and drained
  • 1 can (14.5 ounces) black beans, rinsed and drained
  • 2 cans (15 ounce) diced tomatoes
  • 1 can (14.5 ounces) corn
  • 1 cup water
  • ½ cup chopped fresh cilantro
  • Avocado, yogurt, and rice or tortillas to serve
Instructions
  1. Heat the olive oil in a large pan or dutch oven over a medium heat.
  2. Add the onion and cook for 4 minutes, stirring occasionally.
  3. Add the garlic and mushrooms and cook for a further 5 minutes.
  4. Add the chili powder, cumin, coriander, cayenne pepper (if using), and tomato paste, and cook for 2 minutes, stirring continuously.
  5. Add the salt, pepper, oregano, sugar, kidney beans, black beans, tomatoes, corn, and water. Stir, cover, and simmer for 15 minutes (or longer depending on how much time you have).
  6. Add the fresh cilantro, adjust seasonings as necessary, and serve.
