School is almost out for the summer and the heat is really starting to kick in. So what better way to celebrate with the kids than to kick back and enjoy a cool, refreshing glass of this healthy watermelon agua fresca. It is tasty and sweet enough to satisfy the kiddos, while being nutritious and hydrating enough for you to feel good about giving it to them. Move over juice boxes, there’s a new {healthier} kid in town. But don’t think this drink is just for the youngsters. There’s no age limit on this one.
Aguas frescas are refreshing drinks made from fruits, flowers, or seeds blended with sugar and water. They are popular in Central America. Some recipes call for the drink to be strained after blending, but I prefer to keep all that healthy fiber in the juice. I also opted to use maple syrup instead of regular sugar, and I cut down on the amount of sweetener used. But the result is still extremely tasty and satisfying, even for my two young children. The other wonderful thing about this healthy watermelon agua fresca is that it only takes 5 minutes to whip up. So there really is no excuse for not making it. Grab yourself a watermelon, plug in the blender, and start celebrating the fact that it is almost summer (in our hemisphere at least).
- 2 cups chopped watermelon
- 1.5 cups water
- Juice of 1 lime
- 1 tsp maple syrup
- 5 mint leaves
- Put all the ingredients in a blender and blend until smooth.
- Serve over ice.
